Monte Cristo Sandwiches

John and I went to Disneyland on our honeymoon.  Additionally, my birthday fell on one of the days we were at the park.  So even though The Blue Bayou was booked, they got us in. . . right on the shore to the Pirates of the Caribbean ride.  It was quite the memorable experience.  And we will never forget how delicious their Monte Cristo Sandwich was.  This recipe is delicious, too, but isn't battered and deep fried like the Blue Bayou's.  Oh, so good, though.

{What you need}
8 slices French bread
1 pound cooked ham, thinly sliced
8 ounces Swiss cheese, sliced
2 eggs
3/4 cup milk
1/4 cup butter
1/4 cup olive oil
powdered sugar (optional)
Raspberry jam (optional)

Top 4 slices of bread with ham, Swiss cheese, and another slice of bread.  Beat eggs, add milk, dip tops and bottoms of sandwiches into egg mixture.  Heat oil and butter in frying pan over medium heat.  Fry sandwiches until golden on each side.  Be patient, don't take them out prematurely.  Keep in a 200 degree heated oven until ready to serve.  If desired, sprinkle lightly with powdered sugar and serve with jam.  Such a good combo of savory and sweet!!

GIVEAWAY! and Ham and Swiss Sliders with Poppy Seed Sauce

So this blog is relatively new, and I thought it would be fun to celebrate my 50th post by re-posting my very first recipe that started it all: the beloved Ham and Swiss Sliders!  I think I have made these 4 times within the last month for different occasions, and they really are just the greatest little sammies you could imagine.  Everyone LOVES THEM (except John, he doesn't like ham or swiss or mayo..... weirdo, but a hot weirdo)!  If you haven't tried this recipe, YOU SHOULD!  And then let me know what you and your guests think!  And stay tuned, at the end of the post I'm presenting my first GIVEAWAY!!!

Ham and Swiss Sliders with Poppy Seed Sauce
This has become one of my all time favorite recipes. It is so delicious, so easy, and you can make huge amounts at a time. These sliders are just beautiful and are great for family parties, showers, church functions, etc. You can assemble them the day before and keep them covered in the fridge until you are ready to bake them. You can even substitute some of the ingredients for light alternatives if you're watching what you eat. This recipe can also easily be halved. Enjoy!!

{What you need}
24 good white rolls
24 pieces good honey ham
24 small slices swiss cheese
1/3 mayo
1/3 cup miracle whip

{poppy seed sauce}
1 1/2 TBSP poppy seeds
1 1/2 TBSP yellow mustard
1 stick butter, melted
1 TBSP minced onion
1/2 tsp. worschestershire sauce

In a small bowl, mix together mayo & miracle whip. Spread into both sides of the center of each roll. Place a slice of ham & a slice of swiss inside of each roll. Close rolls & place into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes, or until butter sets slightly.

Cover with foil & bake at 350 for 12-15 minutes or until cheese is melted. Uncover & cook for 2 additional minutes. Serve warm.

Chicken Cordon Bleu

My gorgeous and talented sister Andee  is quite the little chef.  She made these the other night for a big family dinner and everyone raved about them.  And she was kind enough to share the recipe with me so I could share it with you!  This is one you will make a lot....

{What you need}
12 unthawed chicken tenderloins
Swiss cheese,  6 slices
ham, 6 slices deli cut style
bread crumbs, about one to two cups
paprika, about 3 tablespoons
1 egg, beaten
salt and pepper

{Dipping sauces}
Creamy Sauce:
1 can cream of chicken soup
1/2 cup sour cream
1 tbsp lemon juice
Honey mustard:
1/4 cup mustard
1/4 cup honey
1/8 cup light corn syrup
1/8 cup mayo
1 tsp dry onion flakes

Pound the chicken a little to make it flatter (and more tender). Sift  paprika in about a cup of bread crumbs, spread on a plate. Sprinkle salt and pepper on chicken. Dip chicken in egg, then in bread crumbs on both sides.  Spray baking dish with nonstick cooking spray and spread half the breaded chicken strips in the the baking dish. Top with a slice of swiss and a slice of ham on each one. Top those with another breaded (on one side, breaded side up) chicken strip on each.

Bake at 400 for about 25 minutes or until chicken is no longer pink. Remove from oven and place another cheese slice on each one. Return to oven for a few minutes. Baking it hotter and faster kept the chicken juicy.

{Sauces}
Creamy sauce:
Mix all ingredients together and heat.
Honey mustard dipping sauce:
Mix all ingredients.  Serve hot or cold.

Serve over rice or these mashed potatoes.

Easy Broccoli Gratin

I got this recipe from my wonderful mother-in-law who is a fabulous cook. I have really learned so much from her! She got this recipe from a dear friend of hers, and I hope they don't mind that I'm sharing it with the Nummies world (population 8). It's a great way to jazz up a side of broccoli and to trick kids into getting their veggie serving. Even if they don't like greens, they are sure to love this!

{What you need}
about 1 lb. fresh broccoli flowerets
(a little less than a whole bag fresh broccoli from Costco)
about 1/3 cup mayonnaise
about 2 teaspoons mustard
1/4 teaspoon garlic salt
1 pound swiss cheese
(or your cheese of choice. Cheddar is great, too.)

Steam the broccoli for only a few minutes, make sure there's still a little crunch to it. Place in a greased 9x13 baking dish. In a separate bowl, combine mayo and mustard. Add the cheese. "Glop" (I don't know how else to describe this process) the cheese mixture onto the broccoli and make sure it is evenly glopped around. Bake at 350 for about 10 minutes, or until the cheese is melted. Serve with your favorite main dish!

Pesto Swiss Fondue

I really think this was the best dinner I have ever made! I'm quite proud of myself. Not that I can take credit, because it was just an awesome recipe. It is full of flavor and fondue is always super classy. We served this at a dinner party we hosted and had each couple bring a few of the dipping foods. This could also serve as a romantic dinner for two, or a beautiful spread to impress the in-laws with. No matter who you serve it to, they'll
LOVE IT!
So delish . . .

{What you need}
1 12oz. block of swiss cheese, cubed
2 T flour
2 large garlic cloves, chopped (I used a garlic press)
1/2-3/4 c. of white cooking wine (I used 3/4 c)
1/2 c. milk
2 T of jarred prepared pesto

{Ideas for dipping}
cubed french bread
cauliflower
broccoli
granny smith apples
new potatoes or cubed red potatoes
sausage
bratwurst

Cube cheeses and chop garlic. Place cubed cheese in a tupperware and add flour. Replace the tupperware lid and shake until all the cheese cubes are coated. Spray a medium sauce pan with cooking spray and add the chopped garlic. Cook on medium high until the garlic just begins to brown. Then add wine. When the wine begins to boil, reduce the heat back to medium and slowly add the flour coated cheese and milk a little at a time, always stirring so it will not burn. When the cheese is all fully melted, add the pesto, transfer to heated fondue pot, and serve immediately. If you are not using a fondue pot you may need to reheat it after a little while as the fondue will thicken as it cools.
